Hi Neighbors! To save money on groceries, cut down on food waste and make sure you always have nutritious produce for a healthy dinner, prepare the vegetables below. All of them last at least a month and a lot of them stay good a lot longer than that. Let's talk about the long lasting vegetables.

Fresh pumpkin can last up to four months in the refrigerator. No space in the fridge? Orange squash will last up to three months on your counter or in a cool, dark kitchen.

Red beets can last between two and four months if stored in the refrigerator. Make sure to cut the stems if they are still stuck. Storing it will draw moisture away from the roots, which, over time, can affect flavor, strip nutrients, and cause vegetables to shrivel.

Sweet Potato

Sweet potatoes are high in fiber and have a low glycemic index, which means they are digested slowly and will keep you feeling full long after eating. If you store sweet potatoes in a cool, dark place, you can expect them to last up to a month. Store in a loose bag to allow for optimal circulation and freshness.

Cabbage has a much lower water content than traditional vegetables like spinach and romaine, which helps extend its shelf life. Wrapped in plastic and stored in the refrigerator, brassica vegetables can last about two months.

Instead of buying baby carrots, which tend to spoil quickly, opt for the full size carrot variety, which is one of the cheapest vegetables for weight loss. If sold in plastic bags, place paper towels inside to absorb any remaining moisture and replace them whenever they become saturated. Because moisture accelerates spoilage, this tactic can keep carrots fresh and crunchy for months.
